Fall is my favorite season of the year. The smell of freshly fallen leaves on the damp ground, light sweaters, blue jeans, riding boots and pumpkin everything (right-I know this isn’t a pumpkin recipe, but had to throw that in! I know you can relate!). It’s the time of year when I find myself doing the most cooking and baking since I am in love with hearty fall fruits and vegetables. Apples are in abundance at the end of August and what better way to celebrate the beginning of fall then with a quick and easy plant-based apple crisp recipe!
My stepmom came up to visit this week and brought a peck of freshly picked apples from a farm stand in Oaktown, Indiana. The first thing I thought of when I saw the bag of apples was apple crisp. It’s an American staple and one of my all-time favorite desserts. It’s also extremely easy to make vegan or plant-based by simply substituting the butter with vegan butter or margarine and replacing the sugars with organic sugar. It’s also one of the easiest desserts to make and you can sub in your favorite stone fruit in place of apples if your tummy desires.
I just had a baby less than 3 weeks ago and was able to make this apple crisp recipe while he napped (with a few minor interruptions). That is how easy it is. - 6 medium apples (i like pink lady or granny smith)
- 2 tsp ground cinnamon
- 2 tsp lemon juice
- 1/4 cup + 2 T granulated organic cane sugar
- 1 cup + 2 T packed organic brown sugar
- 1/4 tsp vanilla
- 1/2 cup vegan butter, melted + 2 T softened
- 1/2 tsp salt
- 1 cup rolled or quick oats
- 1 cup + 2.5 T all purpose flour
- 1/2 cup + 1 T water
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- Slice apples 1/8 inch thin and place in large bowl
- Preheat oven to 35o degrees F
- Add lemon juice, 1/4 cup cane sugar, 1 tsp cinnamon to apples
- Stir apples to coat evenly with sugar mixture
- Spread apples evenly in 13x9 pan
- Sprinkle 2.5 T flour, 2 tsp sugar over apples
- Pour water evenly over apples
- Combine oats, 1 cup flour, brown sugar, baking powder, baking soda, salt, melted and softened butter and vanilla until crumbly
- With hands, crumble evenly over apple mixture - should be a generous coat
- Bake at 350 degrees F for 45 minutes until golden brown and crisp
- Great with dairy-free ice cream and coconut whipped cream
