I have been fascinated with food since before I can remember and my life literally revolves around it. For me, eating is not just a necessity of life, but an experience waiting to take place. I started my career in food at the ripe age of 15 as a server at Pizza Hut and continued to serve tables for 7 years. After graduating from college, I started working as a professional food saleswoman and I am still in the business. On the side, I freelance for a few publications and I’m a strong believer in paying it forward.
As of August, 2015, I became a mother to Oskar John, my beautiful (okay handsome) little guy. Oskar is the official taste-tester for all of the delicious and healthy baby and toddler food recipes that I create for Green Bib.
I love animals and therefore I choose not to eat them. I also have a cat, Maya.
I overcame a life-threatening eating disorder and now I spread awareness on the topic. My favorite thing to do is to share a good meal, enlightening conversation and a few glasses of wine (or Belgium ale) with great company. I love coffee shops and feel alive when helping others.
In 2011 I switched to a predominantly plant-based diet and haven’t looked back. The things that I continue to learn, the dynamic foods that I enjoy and the positive effects this decision has not only my body, but on the planet in which we live, inspired me to be an advocate of this lifestyle. It’s kind of neat to think about how the foods that we decide to eat actually help others. I like to think of it as a form of Paying It Forward.
